A while ago I caught an enormous porgy. This thing was over 14". Bigger than a lot of the fluke we caught that day. I almost forgot about it then decided to simply fry it up quickly after 3 days of sitting in the fridge. It was DELICIOUS!

Ingredients:
1 or 2 large porgies
seasoned breadcrumbs (see below)
Peanut oil
Butter

Simply bread the cleaned porgy with some seasoned breadcrumbs (to which I added a little Italian grated cheese and some old bay & garlic powder) then fried it in 70% peanut oil & 30% butter.

I can't wait for my next porgy!
(this one was so big that it was my entire meal for the evening and it was plenty)
